The rib eye is one of our most popular cuts; thanks to its incredible marbling and intensely meaty flavor! Also known as the Delmonico steak, this portion is distinguished by its rich taste and even distribution of intramuscular fat; the webbing of marbling melts during the cooking process basting the meat and imbuing it with uniquely delicious flavor.

Sourced from Australia, our Wagyu comes from Broadleaf: the family-owned distribution company known for supplying the highest quality meats on the market. Sourced from the finest Australian Wagyu cattle, these herds are developed slowly, with the strictest attention paid to Japanese Genetics and the ancient tradition of feed rationing first developed by the original Japanese Wagyu farmers. Combined with intensely strict trim specifications and surgical cleanliness, allow Broadleaf to deliver a 120-day shelf life on its premium beef.
