Curry is not a spice per se, but rather a blend of spices where the main ingredient is brilliantly orange-yellow turmeric, the central spice in curry. Besides the turmeric, curry can be blended with cumin, black pepper, ginger, coriander, and other spices in different amounts. It’s the job of a master spice blender to make the blends shine with flavor, to balance out the spice level, pungency and heat. There’s a big difference as well between regional types of curries, like for example Indian and Thai curry. The former includes a great variety of spices mixed together, including fenugreek, cardamom and cinnamon, all ground into a powder, while the latter, Thai, is a mix of curry pastes blended with coconut milk. In America, we’re most familiar with Indian curry, prepared in popular Indian dishes like curry chicken or coconut curry chicken, delicious shrimp curry, or vegetable curry, all usually accompanied by rice and tasty naan bread (naan and curry are a perfect combination!). Thai curry paste comes in different colors (and spice level) – red, green and yellow. Thai curries range in heat, with the hottest being and yellow being the mildest. Thai curries use a variety of ingredients including ginger, garlic, galangal and lemongrass, but they key ingredient is chilli peppers. The different types of chile peppers used is what gives Thai curries their spice level and color.
