For many years now, there’s been a trend towards more natural, more unprocessed foods, and ancient grains have certainly won notoriety and taken center stage in many kitchens and restaurants in America as an alternative to over processed grains like white rice or white wheat. Ancient grains are usually colorful and nutrient-rich, loaded with vitamins, minerals, and loads more fiber than our most common grains.


There’s also the advent of all things gluten-free in cooking, and there are many ancients grains like quinoa and amaranth that are naturally gluten free, which makes them even more prized in modern culinary purposes. Incorporating these grains into your menus are the perfect way to ease into the world of natural cooking and catering to the health-conscious gourmets. Ancient grains are also good for baking, so bakers should be stocking up on these.


The health benefits of ancient grains vary from each variety – amaranth is rich in fiber, calcium, iron and potassium, with 9 grams of protein per cup. It’s great for pizza dough and for making gluten free bread. Farro is widely known for being super protein rich, and high in dietary fiber (more than quinoa and brown rice), while being low in calories. You can use farro instead of rice for farro risotto. Quinoa is the more popular ancient grain in America, or at least the more well known, especially for those following vegetarian and vegan diets, as quinoa is one of the few plant foods that contain high amounts of all nine essential amino acids. Quinoa is also loaded with fiber, Vitamins B and E, potassium, and the list goes on!
