Pistachios are an ancient nut, first cultivated in the Middle East thousands of years ago - and interestingly enough, they’re one of the only two nuts mentioned in the bible (the other is the almond). Today, almost all the pistachios consumed in the US come from California, where the sunny and dry climate is perfect for growing pistachio trees.

Most often for baking, pistachios are sold shelled, but that comes at a premium, and if you’re looking for a more cost-effective option, albeit one that requires more work, go for pistachios in their shells. Studies have shown that when we eat pistachios in shell, we actually consume less! Which is a good thing, because these delicious little nuts are quite high in calories - pistachio calories are about 160 per 1 oz. Most of these are healthy calories, since pistachio benefits include a wealth of protein, fiber, magnesium, thiamine, manganese and other vitamins and minerals. This makes them a nutrient-packed nut, a healthy snack that you can incorporate to your daily diet. Additionally, they’re high in good-for-you fats, polyunsatured and monosaturated fats that help lower bad cholesterol, so pistachios are definitely a part of heart-healthy diet.

You can use pistachios in endless savory and sweet recipes. Try them in baking, like in pistachio cookies, biscotti and in a delicious pistachio cake or pistachio macaron. As a finishing crunchy topping for ice cream, they can’t be beat! Pistachios are great for low-carb, keto diets, so you can use pistachio flour to replace regular flours for gluten-free desserts. On the savory end, we love fish-crusted pistachio recipes, in stuffing for lamb, or tossed with pasta or risotto for a great crunchy texture and amazing flavor.
