As a lot of people already know, peanuts are actually not a nut, but a legume, more similar to beans and peas than walnuts and almonds. It’s an ancient crop, going back around 3500 years, originally from South America. There are many varieties of peanuts available, however the two most popular ones are Runner peanuts and Virginia peanuts. Runner peanuts make up the vast majority of the peanuts found in the United States. They boast an even shape and size that allows for uniform roasting, and you’ll find most peanut butter is made of Runner peanuts. Virginia peanuts are large (the largest), and you’ll find them usually roasted in their shell. This peanut is also used for peanut butter. Spanish peanuts are smaller, and have a skin that’s red-brown. Their higher fat content makes them the choice peanut for peanut oil production. Other types of peanuts include Valencia peanuts.

Besides their incredible flavor, peanuts have a great nutritional profile. They’re rich in protein, high in good fats, and a good source of fiber. Peanuts are also low in carbs, and a great food to add to keto or paleo diets, and being gluten-free, are a healthy snack for those with grain intolerance or celiac disease. They’re also high in Biotin, Copper, Niacin, Folate, Manganese and many other vitamins and minerals.

Peanuts are sold in a variety of presentations: raw, blanched, boiled, roasted, salted and unsalted. Roasted and salted peanuts are usually the most commonly used as snacks, as the salty flavor makes them irresistible. Raw and blanched peanuts are found in pastry and confections, great in cookies and baked goods. Peanuts are heavily featured in some Asian cuisines, like in the delicious Chinese Kung-Pao Chicken, and also served in Thai dishes with noodles and rice, with chicken, meat or shrimp, and a good helping of peanut sauce.
