What are escargot? Yes, escargot are what you think: snails. Edible, delicious snails! Escargot snails are a French delicacy, usually served in their own little escargot dish with little holes, cooked in butter, garlic and herbs. Escargot can be served with or without the shell, but we find the shells add that authentic French bistro touch. You can buy empty escargot shells online here.

Although escargot are considered a gourmet delicacy, the truth is this French treat is easy to make, since it’s best prepared simply. The ultra-authentic and traditional way of cooking escargot is smothered in garlic and parsley butter and nestled in their own shells, with plenty of crusty Franch baguette to sop up the delicious sauce. What do escargot taste like? They’re a mix of the texture of plump mushrooms with a lot of grassy notes, herbaceous and delicious. To eat escargot in the shell, tongs to grab the shell and a snail fork is usually offered, a two-pronged skinny fork that perfectly plucks the escargot out of the shells.

The escargot that are most popular in restaurants are the helix variety, those which are sourced from France and served a la bourguignonne. These are the authentic French snails, also known as petit gris and the petit gros, the Burgundy escargot. There is also another variety that has gained popularity in recent decades, the escargot achatina, a snail that comes from Asia. The helix is by far considered the superior, tastier variety, and thus holds a higher price.
