There are many varieties of olives, and lucky for you, we carry a great selection of the most popular ones to keep your establishment well stocked and your kitchen flavorful. Kalamata olives are probably the most popular olive used in the cooking in the US. Kalamatas come from Greece, and have deep, beautiful purple color. The flavor of Kalamata olives is smoky and fruity and they’re usually preserved in red wine or olive oil, and made into superbly delicious tapenades and spreads.
Italian olives are also wildly popular, and include Castelvetrano olives, Cerignola olives, Taggiasca Ligguria. Castelvetrano are Italy’s most popular olives, served for snacking and antipasto. This green olive is sweet and mild. Cerignola are one of the largest varieties of olives, also green, and are harvested in Puglia – their large size makes them the preferred olive for stuffing.
France is also a great supplier of gourmet olives, and famous for the Niçoise olive and the Picholine. Picholine olives are crisp and have a great crunch, with an elongated almond shape and tart flavor. Niçoises are the olive that gives the Niçoise salads its name – a reddish purple olive that’s very intensely flavorful and aromatic and is also usually served as a delicious tapenade.
