Truffle juice is one of those ingredients you didn’t even know you needed until you've tried it, at which point it will immediately become indispensable to all your savory cooking. What the French often refer to as cuisson, this luxury ingredient is less of a “juice” and more of a cooking liquid. Made from the liquids released by truffles while they are being prepared for bottling or canning, truffle juice is bursting with all the same wonderfully earthy complex flavors we know and love in the fungus themselves. Not to be confused with truffle oil, the culinary uses for truffle juice are somewhat different. Where the oil is, of course, fat-soluble, the juice is water-soluble.
