Originally brought to Texas in the 1930s, the Nilgai Antelope originated in India and Nepal. Better suited to hot environments than cattle, Texas resembled their native climate and allowed the antelopes to thrive even in the oppressive heat of the desert. With all the flavor of red meat but with the same amount of fat as a chicken breast, the Antelope is a fantastic option for any menu and a great choice for the health-conscious among us. Thanks to its rich diet of native grasses and brush, a cut of Nilgai has as much, if not more, Omega-3 than a Salmon filet! Along with a large amount of healthy fats Antelope is high in Selenium, Iron, and Zinc, and a handful of essential B vitamins. The ranches we partner with employ the novel method of field harvesting their meat enabling them to maintain ultimate freshness and tenderness. Using trained sharpshooters the antelope is shot on sight. Killed instantaneously to prevent the natural adrenaline rush that toughens meat, this antelope is some of the most tender you’ll ever try. With a mobile butchering facility, the animals are able to be immediately dressed and processed before beginning their meticulous aging process.
