The secret to cooking great food is to lock in every last ounce of flavor, and nowhere is that more well done than in the sausage. Perfectly seasoned throughout and stuffed into casings, sausage is a flawless food, and one of the best meats for sausages is elk. Savory, distinctly beefy, and noticeably sweet, it is an excellent complement to so many of the traditional flavors and spices used in sausage making. A lean source of protein, you’ll generally find elk combined with fattier meats like pork or beef, and sometimes a combination of all three. While the world of sausage is a diverse one, it can be most easily broken down into three categories: fresh, dried, and cooked. Fresh Sausage contains meat that has not been cured or smoked and must be completely cooked before consuming. Smoked Fresh Sausage, on the other hand, has been cured or smoked to add another layer of flavor, but is still technically raw. Cooked Sausage has not been cured or smoked and can be eaten immediately out of its wrappings if desired. Cooked Smoked Sausage has been cured, cooked, and lightly smoked, giving it a full flavor and the added convenience of no cooking necessary. Dried Sausages are cured and then left to air dry, developing a firm exterior or rind. Ready to serve cold or hot, they don’t technically need cooking.
