Osso Bucco is a traditional Italian dish, first created with veal shanks in mind, however, its delightful results have inspired countless renditions using every meat imaginable. We prefer venison for its bold meaty taste and its more complex flavor profile. Thanks to the fact that the shank is one of the more intensely used muscles on the deer’s body, it’s tough and lean, but it’s by far the most flavorful. This moist cooking method keeps the venison juicy and helps to break down any tough bits, transforming the entire portion into a dish that tastes expensive but is one of the most affordable!
