Today some of the finest elk in the world come from the lush countryside of New Zealand, where they raise the highly regarded meat most popularly known and marketed as Cervena. This title is not an indication of the breed but rather one of quality, consistency, and an exacting standard that sets this amazing meat apart. One of the first, in a relatively long list of criteria, is the age of the animal when killed. Cervena elk must be slaughtered while still under three years of age to ensure the meat is still meltingly tender and mild in taste. Allowed to range free on the pristine pastures that make up their habitat, they are grass-finished and never given any hormones, growth stimulants, or antibiotics. Sourced from Wapiti elk, this name is a Native American term, meaning ‘White rump” and refers to the hybrid cross between the Roosevelt, or American Elk, and the New Zealand Red Deer. Our loins and chops are sourced from some of the most reputable purveyors in the Southern Hemisphere. Extraordinarily flavorful, elk is also surprisingly tender and easy to prepare, cooking quickly thanks to its naturally lean makeup. Though often compared to venison, elk is much beefier in flavor, making it a great transition if you’re new to the world of game.
