There are many varieties of chorizo out there. The original Spanish creation is a roughly chopped mixture of pork and fat. Seasoned with garlic, and a generous amount of smoked Spanish paprika, this spice combination is the reason behind its signature deep red hue. At its roots, chorizo is nothing more than the simple amalgam we have just described, however, throughout the ages variations have emerged. Hundreds of different chorizos now exist, all slightly different depending on the region of Spain they come from. Some are smoked, others contain various herbs, and they all come in a multitude of different shapes and sizes.
