Foie Gras is made up of two lobes, one significantly smaller than the other, and generally weigh about two pounds total. Coming in a variety of grades (A, B, and C) based on their quality and overall appearance, the better the grade of the liver, the less you have to do with it to make it taste great! Our duck Foie Gras is grade A, meaning a simple sear is all it takes to make it ready to serve, but there are many other delicious methods of preparation. Try sautéing or poaching it, or throw it in the food processor with a little brandy and butter to make a silky savory mousse. Layer slivers into a small loaf pan with a sprinkling of Armagnac between each layer weighed down and chilled the liver can then be unmolded and sliced for a classic French terrine. Delicious when paired with many foods and dishes, we especially like to accompany Foie Gras with sweet or tart flavors to balance out its ultra-rich taste.
