Pates

Like caviar, pate is a dish often associated with luxury. Its deep, complex flavors and silky smooth texture just beg to be tried. Ranging from extremely fancy and expensive, a la Foie Gras, to as affordable and approachable as a bowl of chips, pate can fill any void. As versatile as it is delicious, pate can be served hot or cold, and depending on what it’s made of, pairs wonderfully with a huge range of flavor combinations! Traditionally served en croute or "in crust" pate was baked into a technically edible container. Originally this “crust” wasn't designed to be eaten though it was made of wholesome ingredients. A simple amalgam of flour and water, the mixture was formed into a vessel then baked until rock hard. The pate was added somewhere along the way. Similar yet different, pate is often seen molded into a terrene today. An elegant, rectangular shape it looks positively regal on the dining table and makes slicing and serving easy. Pate can be made of almost anything, but to simplify, it’s generally a combination of ground base-ingredients and herbs. These base ingredients can be any kind of meat, including seafood, pork, poultry, beef, wild game, and even vegetables. Generally, a really good pate will employ a combination of these. We love adding pork to our chicken pate for a richer flavor combination, or a little goose to our duck pate. The grind of the pate is also up for interpretation, it can be smooth and creamy almost like a mousse, or chunky sometimes with the addition of nuts. Depending on the kind of meat you use and the seasonings added, serve your pates with flavors that will complement them. For example, a liver pate like Foie Gras combines wonderfully with sweet and tart flavors. When serving, be sure to include some sweet fresh fruits, compotes, or preserves alongside to highlight and complement your pates!
