Candied fruit is one of the most ancient sweets we have. Dating back to the 14th century, candying fruit was a popular practice not only because it intensified the sweetness of fruits, but also because it was a way of preserving produce at its prime. This was especially important before the days of modern refrigeration and transportation when you had to eat seasonally. The originators of candying were the Arabs who were reported to have candied “rose petals and citrus” for their celebrations and banquets. A truly brilliant technique, the practice of candying spread rapidly across Europe. Region to region, the methods all varied slightly, but the general principle consisted of boiling fruit in a sugar solution until it was saturated. Today we still employ that same technique, not so much for the preservation of the fruit, as for the taste and texture it provides.
