Though both doughs are different, they are equally time-consuming to make, and arguably not as good as the factory-made varieties. Filo is a papery-thin lean dough, that is rolled out into impossibly thin sheets and then cut down to size for use. Formed into individual servings, once filled, they are the ideal appetizer or dessert. Puff pastry, on the other hand, is very rich and requires a lot of butter. Layers of butter and dough are rolled out together and folded. Once chilled, the whole process is repeated until hundreds of layers have been formed. These layers cause the separation of dough during baking and give you that wonderful shattering texture of a good croissant or danish.
