The term praline can be a confusing one, depending on where you are in the world, pralines could be one of several different sweets. The French form of praline, are whole almonds or hazelnuts individually covered in caramelized sugar. Crunchy and sweet, these sugared almonds are ground into a powder and referred to as pralin. Used as an ingredient in cakes or swirled into ice creams, pralin is a favorite addition to recipes for its ability to add flavor and crunch. If mixed with chocolate to form a paste, the pralin transforms into praliné and is then traditionally used to fill chocolates. In Belgium, any chocolates with a hard outer shell and soft center are referred to as pralines, whereas, in the southern states of America, pralines are soft fudge-like candies comprised of toasted pecans, sugar, and cream. Despite the geographical confusion, pralines are delicious no matter where you enjoy them, or what form they take.
