Pork chops all come from the loin of the hog which runs from the hip to the shoulder and contains the small and succulent piece known as the tenderloin. The most common chops you see on grocery store shelves or the butcher’s case are chops taken from the rib area of the loin. Depending on where the steaks are sourced, they can range from quite soft and tender to chewy and tough.
