A true breakfast staple, everyone loves bacon. With a singularly delicious flavor and a texture that combines the perfect amount of meaty chew with crisp curling fat, this savory cured meat is a universal favorite. Dating back to 1500 BC China, these tasty strips of salted pork have been a favorite for centuries. With a longevity unmatched by most other foods, bacon’s culinary standing has stood the test of time. More popular than ever, bacon has become a veritable cultural obsession and a fixture of American pop culture. The bacon we most often see in North America, with its signature streaks of fat and meat running parallel to one another, is taken from the belly of the pig, where there is a greater ratio of flavorful fat. There are a host of other “bacons” sourced from different parts of the pig, but the undisputed favorite is this belly or side bacon. You’ll most often find bacon prepared using either wet or dry curing methods. Wet cured bacon is kept in a salty flavorful brine during its curing and keeps the bacon moist throughout. Dry cured bacon is rubbed with seasonings and salt and left to air dry, giving it deep and intense flavors.
