Being a leaner meat, you need to take special care when cooking Bison. To keep steaks tender and enjoyable, cook them over high heat quickly, and be sure never to take them past medium. For tougher cuts, slow braising or smoking is the way to go, as it does the best job of breaking down those tough fibers and rendering a truly succulent dish. Thankfully with tenderloin, the cut is already of the highest quality, meaning it calls for the bare minimum when it comes to seasoning and preparation! Simply season with salt and pepper before you throw one of these steaks into a hot cast iron pan. Sear the steak quickly to develop that caramelized crunchy exterior, then flip and finish it with a generous knob of butter and some hearty herbs like rosemary and thyme. Because it’s such a lean cut of meat, the addition of a fat like butter or a full-bodied sauce rounds out the taste and experience of eating a filet mignon. If averse to butter, use cream for that same rich experience or try a red wine sauce to add complexity to the dish.
