Triple creme cheeses are made by injecting heavy cream into already lush rounds of cheese before the curd is fully formed. This gives the cheese a fat content unparalleled by other cheeses. French law mandates that for a cheese to be considered and labeled ‘triple creme’ it must have at least 75% butterfat. To understand the appeal of creating a cheese with this level of fat content one must travel back in time to when being ‘fat’ was a visible sign of affluence. Cheesemakers capitalized on wealthy buyer’s vanity by making a cheese higher in fat than any that had come before it, and so emerged the first triple cremes. Today these fantastic rich cheeses are still adored, not as a status symbol but instead for their smooth spreadable texture and mild nutty flavor. Spread them on anything from crackers to a toasted baguette for a delicious snack or breakfast. Add them onto a sandwich or panini for added richness, or melt them into a variety of dishes for that extra touch of cream.
